Is the 198 village figure real?
Yes. Al Khaburah is recorded as having 198 villages, among them Al Sihra, Al Qala, Khadra Al Makatim, Sanaa Bani Ghafir and Miha Bani Kayoum. The demand series in the project are modelled, because no public per-village daily record exists, and the page labels them as such.
Why is the sum of the peaks wrong?
It is not wrong as arithmetic, it answers a different question. Summing each village's largest day tells you what would happen if all 198 had their busiest day simultaneously. They do not, because they farm, fish and herd on different calendars, so the figure describes a day that cannot occur.
